The entire process of vacuum packing can be summarized in the following five steps.
1. The first step in vacuum packing is to remove the air content in the food as well as the container (the plastic bag in which food is packed). The vacuum packaging machine removes the air content of the container by a mechanical process. The process is applied to both the food and the plastic bag. When all the air is removed from the system, the food is ready for packing.
2. In this step, the food is sealed with airtight mechanism. There are different types of machine that offer different types of sealing mechanism. In commercial kitchens, the packing machines used are of high capacity. They can hold both the food and the carry bag inside the machine. On the other hand, there are other machines that pack the food externally, which means they do not do the packing from inside the food-packing machine.
3. After the food is packed, you can rest assured that they are completely free from oxidation. As there is no air inside the system, there is no chance for food decay. Food decay is caused due to the activities of aerobic bacteria. As there is no air inside, the bacteria cannot act on them. Moreover, because of the absence of air inside the system, the moisture (water content) in the system too remains intact. Oxidization causes evaporation. If there is no oxygen, there is no chance for evaporation. It means that the moisture content in the food will remain forever.
4. The vacuum packed food is free from contamination. There are a number of factors that cause food decay. Human touch, dust and the improper handling during transportation cause damage to the food. Vacuum packing protects food from all these external agents that harm the food quality. Therefore, you can ensure long life and better quality for the food packed using vacuum packaging machine.
5. Food stored using vacuum packing preserves its freshness and quality. Hence you can enjoy the same flavour and taste of your favourite food for many days and even a couple of months. The most common types of food stored using vacuum packing include meat, fish, cheese and diary products, fruits and vegetables.
